MODENA SPARKLING WINES - SO ROSE, CASTELVETRO DI MODENA

Castelvetro di Modena, is a small medieval gem of a village in the hills around Modena which we extensively toured in search of something special. The vineyards are planted mainly to Lambrusco Grasparossa di Castelvetro and Pignoletto (Grechetto Gentile), two native grape varieties which are the heart and soul of Emilia tradition. The wines that are produced on the estate become sparkling wines thanks to natural fermentation, fully preserving their organoleptic characteristics. It is a classic area for sparkling wines and there is only one non- sparkling wine using one grape produced in this area.

SO ROSE SPUMANTE BRUT

Grapes : Lambrusco Grasparossa di Castelvetro / Pignoletto (Grechetto Gentile)

SO ROSÉ is produced in a unique way by blending together :

- the Lambrusco Grasparossa of Castelvetro, the most traditional naturally sparkling red wine of the area

- the Pignoletto, also known as Grechetto Gentile, a classic local white grape

Tasting Notes : classic pink with a delicate bouquet of red berries, a smooth taste, enjoyable and easy to drink, with a hint of delicate plums and raspberries.

Food Pairings : Excellent to accompany summer days as an aperitive; in good company with anti-pasta dishes such as cold meats, cheese, pasta dishes with Bolognese sauce and other spicy tomatoes based sauces. Serving temperature : 6/8 °C.

Production area : Castelvetro di Modena ( MO ) - 300 mt above sea level. Training system : Spurred cordon. Vine density per hectare : 2500 to 2600 plants/ha. Vinification process : White vilification with fermentation at low controlled temperature. Sparkling production process : Martinotti. Alc. : 11.5% by vol.
