Brusa is a family-run company, active since 1974, in the production of baked goods. Born in the Biella area, a land of mountains, clean air, pure water and hard-working people, it decided that this territory and its people were perfect to develop the excellence of Piedmontese specialties in pastry and bakery. Our products are the fruit of local tradition and the testimony of our deep connection with the territory.

We treasure the know-how of long ago by recovering traditional Piedmontese recipes, performing ongoing
research and pursuing innovation to continue offering a product of excellence. We only select the finest ingredients for our products and strive to maintain the artisanal production methods handeddown to us by the founding members.

The most important resource we have which allows us to make a good product, is provided by our land in Biella and the surrounding areas. This is none other than the extraordinarily pure water that wells up naturally from the granite rocks of the Pre-Alps, recognized as the lightest Water in Europe as it is very low in sodium and free from heavy metals: the ideal raw material to enhance the Flavors and make the most of all the ingredients used in our biscuit and breadstick doughs.

Piedmont also offers us another highly prestigious ingredient, used in many of the regional specialties: The Piedmont Hazelnut, of the “Tonda Gentile Trilobata” variety, recognized as the finest in the world for its organoleptic characteristics and its unique, incredible aroma. When it comes to hazelnuts, the first thing we imagine it is pairing with the chocolate: to fill our Canestrelli and Baci di Dama and indeed to coat many of our biscuits, we select the best Italian extra-fine and extra-dark chocolate, only containing cocoa butter. Also from our peninsula come the “fioretto” and “fumetto” corn flours, which we use in our traditional biscuits “Paste di Meliga” and “Krumiri”, and the eggs, which are one of the main ingredients of our pastry. Finally, we select the best butter coming from the Alps around us and made from the milk cream, giving an unmistakable fragrance and crispness to our sweetest biscuits. Brusa products are all natural. Free of colourant, preservatives and chemical thickeners.

 

GOURMET, THE CLASSIC ITALIAN BREADSTICKS

Since 1974 Brusa has been carrying on the tradition of the Piedmontese breadstick, one of the specialties of its production.

Available in many delicious flavors, prepared every day with simple and genuine raw materials and enriched with Mediterranean spices and ingredients such as olives, chili Pepper, onion, sesame, rosemary, walnuts and extra virgin olive oil, Brusa breadsticks are ideal to accompany meals and to be served as appetizer or a tasty snack.

RUBATÀ, THE TRADITIONAL TWISTED BREADSTICKS

Rubatà are typical breadsticks of the Piemontese cuisine.

Their name derives from the dialect and means “twisted” due to the technique used, which is giving them this typical rolled shape.

After having stretched them, the baker takes them by either side and twists them over, rotating them completely with their thumbs with gentle firmness on the stretching table.

ARIO, THE EXTREMELY LIGHT BREADSTICKS

Produced according to an ancient Piedmontese recipe, the artisan breadsticks are stretched by hand after a slow process that gives them perfect crispness and makes them light, good and genuine.

The name of this line “ARIO” comes from their main feature, that is a lighter and more “airy” breadstick, but without giving up the pleasure of taste.

 

TRADITIONAL PIEDMONT BISCUITS

With its Confectionery assortment, Brusa wants to enhance the long history of the Piedmont tradition, selecting a line of products where the care in processing and the attention to high quality ingredients are expressed at the highest levels.

From the famous Baci di Dama ( Lady’s Kisses), to the typical Torcetti from Biella,  enhanced by “malga”  (mountain hut) butter, to the Paste di Meliga, a corn shortbread, Lingue di Gatto (Cat’s tongues) and all the Piedmont Pastries which represent our territory, which comes from ancient recipes, still preserving the artisan processing methods.

THE TYPICAL BIELLA DARK CHOCOLATE WAFERS

They contain a heart of a thin bar of fine dark chocolate. They originate from the rustic “miasce”, which seem to date back to biblical times and were also enjoyed by the Romans.

In the ancient recipe, these wafers are mixed with white and “fioretto” flour (fine sifted corn flour), sugar, soft butter and the grated rind of a lemon. By incorporating the milk, a fairly firm mixture is formed which is then cooked between two plates, made red-hot by the fireplace. The two plates, initially made of stone, are now made of steel. It was the noble families who began to engrave the coat of arms of their family on the plates so that it would appear on the cooked “miasce”. In the ancient manuscript dated 1805, kept in the royal library of Turin, “Notice sur l’arrondissement de Biella, departement de la Sesia”, Canestrej are mentioned as a typical Biellese product. Nowdays, the Canestrej have become part of the group of traditional Piedmontese agri-food products, protected and enhanced by the Piedmont Region.
