70 YEARS OF SICILIAN PANETTONE - FIASCONARO CASTELBUONO
The fairy tale of the Fiasconaro family is the one of a family in love with its territory, which with its delicious sweets, has turned Sicily into a real dream for millions of people around the World. A fairy tale that still continues today, framed in the picturesque scenery of the Madonie Park and which from the heart of the medieval village of Castelbuono (PA) has arrived in over 60 Countries, taking its products even beyond the boundaries of space aboard the NASA Discovery Shuttle.
It all began in 1953, when Mario created the small “gelateria” in Piazza Margherita, remembered for the delicious citrus granitas made with ice from the local neviera, a typical ice-house casted in the mountain, which soon gave birth to the Award-Winning family pastry shop. A true Laboratory of taste, symbol of made in Sicily haute pastry in Italy and in the world.
But the real qualitative leap comes from the intuition of Nicola, who during his travels in search of new techniques to make his island come alive through the Art of Pastry, matures the idea of revisiting the classic iconic milanese panettone – the “tall” one – with some of the best ingredients of the Sicilian tradition, from pistachio to almonds, and of Madonie tradition, such as manna.
It is the turning point: the mannetto is born, the first Fiasconaro panettone made unique by the use of manna, the sweet resin naturally produced by the ash trees of the local area. The year is 1988, which inaugurates the production of artisanal panettone of the Madonie–based company.
Since then, the company’s growth has been relentless. Since the 1990s, the Fiasconaro brothers have been part of the successful Team that has led the brand to conquer international markets: Fausto leads the Fiasconaro historic store, Martino is the head of the administrative department, Nicola is the award-winning pastry chef and ambassador of the confectionary art made in Sicily in the world.
In its third generation of pastry chefs, nowadays Fiasconaro means what it meant seventy years ago, in that small ice cream parlor in the heart of the Madonie Park. Between tradition and innovation, the company continues to experiment with tastes and flavors, offering a real sensory journey at the discover Sicily and of its best raw materials. The Fiasconaro family has sparked a dream which crosses time and space, always remaining loyal to itself: seventy years of love for origins, seventy years of vision, seventy years of beauty.

SEVENTY YEARS OF SICILIAN PASTRY
Montenero revives the Mannetto, the first Fiasconaro panettone, of which it is the reinterpretation and which takes its name from the district that has seen the Fiasconaro generations grow up in the summer.
With its shape and dark texture it recalls “a' Muntagna”, the profiterole of Mario, the soul and founder of Fiasconaro.
From Mario to Mario, Montenero is the son of the new generation of pastry chefs, of Mario Fiasconaro, namesake of his grandfather, who with the same passion and dedication wants to pay homage and remember the beginning of his own history.

According to the Holy Bible, Manna comes from heaven and is a gift from God. The farmers of the Madonie are well aware of this, who from July to September extract the lymph from the ash trees on the mountains between Castelbuono and Pollina, with wise patience practicing precise incisions – “notches” – on the bark of trees.
The liquid secreted rapidly solidifies under the action of the sun, giving life to small white stalactites - the "cannoli" - rich in extraordinary properties: it is the Manna.
