Our daily commitment is to carefully select our primary ingredients and care of all processing stages to the last detail, in order to create high quality handmade products according to the most modern self-monitoring rules.

 

FONDUE, THE ESSENCE OF VAL D’AOSTA

Mountain pasture Fontina PDO is a typical cheese that is produced only during summer months, when the Valdostana breed of cows graze in pastures on the Alps. The sweet and mellow taste with the aroma of alpine wild herbs growing in the open air pastures gives the milk, and the Fontina cheese, an amazing flavour. We have thus produced a top quality Fondue that is available only during a limited time of the year.

Toma of Gressoney cheese is produced on the mountain pastures of Mount Rosa in summer and it is produced in dairies in winter. It is a semi fat cow’s milk cheese and its wheels are matured around 34 months, even though it is perfect also for long maturation times. It stands out for its aromas of moss and mushrooms, with hints of pepper and vanilla, as well as a slightly pleasant slightly bitter note at the bottom.

Our speciality, Valle d’Aosta Fondue, is made with Fontina PDO that remains faithful to the traditions of the good and wholesome cuisine from the Valle d’Aosta region. A recipe from the past with the quality guaranteed by the controls of every production step. To be enjoyed warm during a dinner with friends on bread croutons or vol au vents, but excellent also as a dressing for amazing first courses or to cream risotto. It can also garnish  meat main courses or original hors d’oeuvres.

All our cheese based excellences can be tasted cold or used hot as in the classic fondue method.

 

TRADITIONAL SAUCES “OUR WAY”

This line of products is prepared with whole pasteurised free-range eggs that, mixed with the other prime quality ingredients, give rise to a variety of savoury sauces to be used with great versatility on your dishes ranging from meat to vegetables. For our ketchup we only use Italian tomatoes.

Essential for a successful meal, our sauces are used to garnish the great classics of Valle d’Aosta’s cuisine, namely Bourguignonne and Boiled meat. Ideal for other dishes such as fish and shellfish, our Barbecue sauce is instead perfect for mixed grilled meats.
